Crustacean Salad

Ingredients

Any cooked seafood such as crayfish, prawns, crabmeat, lobster or a mixture of these, may be used in this recipe.

1 heaped teaspoon Madras curry powder

2 tablespoons Creamy Mayonnaise (page 103) or Egg Free Mayonnaise (page 102)

Unsweetened soy rice or coconut* milk (optional)

1 mango peeled and mashed

1 heaped tablespoon finely chopped chives

1 heaped tablespoon finely chopped fresh dill

900 grams (2 pounds) fresh cooked seafood

1 lettuce washed and crisped in refrigerator

Description

Directions

Stir the curry powder into mayonnaise.

If the mixture is too thick, add 1 tablespoon of milk.

Add mashed mango, chives and dill.

Stir well.

Shell seafood.

Make boats from lettuce leaves.

Top with the seafood and mango mayonnaise.
